I discovered an interesting recipe from Urban Peasant for a “balanced” hard cider. What makes a hard cider balanced? In this case, it’s a mixture of raspberry lemonade and black cherry juice to go along with the traditional apple juice. The author of the article believes that by mixing other juices in with apple juice, the cider achieves an ideal flavor ratio that balances sweetness, tartness, aroma.
